Polish university develops carp-based chips

Researchers at the West Pomeranian University of Technology in Szczecin have introduced a new snack innovation: carp chips, known as "Karpioki."

These unique chips, made from carp meat, are available either pre-fried or as a ready-to-cook option for at-home preparation.

The recipe for Karpioki was developed as part of a project funded by the European Maritime and Fisheries Fund, aiming to create innovative carp-based products and promote year-round sales for aquaculture farms. With nearly 3 million PLN in funding from 2020 to 2023, the project has brought forth a healthy and crispy snack.

According to Emilia Kujawa, spokesperson for the university, the chips use a simple ingredient list: carp meat, tapioca starch (for stability during frying), pepper, salt, and a hint of sugar. The resulting product contains fewer calories than traditional chips, higher protein levels, and significantly reduced levels of unhealthy saturated fats, salt, and carbohydrates.

Additionally, Karpioki are rich in essential omega-3 fatty acids, including EPA and DHA, making them a nutritious alternative to conventional snacks.
