The 23-year-old Pole hit all 20 targets out of 20 to beat Norway's Karoline Erdal by 13.4 seconds with another Norwegian Aasne Skrede third.
After a Friday sprint, Żuk was 40 seconds behind the race's winner, but the clean-shooting record was enough to ensure the gold medal for the Pole.
Kamila Żuk's win marks the second time a Pole has claimed gold at the event.
On Wednesday, Monika Hojnisz-Staręga took the gold in the women's 15 km individual race at the European Biathlon Championships in Duszniki-Zdrój.
Next month, the world's best biathletes are set to compete in world championships in Pokljuka, Slovenia. The event is scheduled for February 10-21.
